Ingredients
  

  • 6 small flour tortillas cut in half
  • 1½ cups cooked chicken shredded or diced
  • 1½ cups shredded Mexican-blend or cheddar cheese
  • ½ tsp chili powder
  • ½ tsp cumin
  • 1 tbsp olive oil or butter
  • Optional for serving: sour cream salsa, guacamole

Equipment

  • Skillet or griddle
  • Mixing bowl

Method
 

  1. In a bowl, toss chicken with chili powder and cumin.
  2. Heat a skillet over medium heat and lightly grease with oil or butter.
  3. Place tortillas in the skillet, sprinkle with cheese, add chicken, and top with more cheese.
  4. Fold tortillas in half and cook 2–3 minutes per side until golden and cheese is melted.
  5. Remove from skillet and cut into wedges if desired.
  6. Serve warm with sour cream, salsa, or guacamole.

Notes

Use rotisserie chicken for quick prep.
Swap flour tortillas for corn tortillas if preferred.
Add diced peppers or onions for extra flavor.
Keep warm in a low oven until ready to serve.
