- In a bowl, toss chicken with chili powder and cumin.
- Heat a skillet over medium heat and lightly grease with oil or butter.
- Place tortillas in the skillet, sprinkle with cheese, add chicken, and top with more cheese.
- Fold tortillas in half and cook 2–3 minutes per side until golden and cheese is melted.
- Remove from skillet and cut into wedges if desired.
- Serve warm with sour cream, salsa, or guacamole.
Notes
Use rotisserie chicken for quick prep.
Swap flour tortillas for corn tortillas if preferred.
Add diced peppers or onions for extra flavor.
Keep warm in a low oven until ready to serve.
