Ingredients
  

  • Lemon Brownies
  • ¾ cup all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • Lemon Glaze
  • 1 cup powdered sugar
  • 2 –3 tbsp fresh lemon juice
  • Optional: extra lemon zest for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk melted butter and sugar until smooth.
  3. Beat in eggs, lemon zest, lemon juice, and vanilla extract.
  4. Gently fold in flour and salt until just combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 25–30 minutes, until edges are set and center is slightly soft.
  7. Let brownies cool completely.
  8. Whisk powdered sugar and lemon juice to form glaze.
  9. Spread glaze over cooled brownies and let set before slicing.

Notes

Do not overbake—lemon brownies should stay dense and fudgy.
For extra zing, add a pinch of lemon extract.
Chill brownies before slicing for cleaner edges.
Store in an airtight container for up to 4 days.
