1️⃣ Preheat Oven
- Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
2️⃣ Make Crust & Crumble
- In a bowl, mix flour, oats, brown sugar, baking powder, and salt.
- Cut in cold butter until mixture becomes crumbly.
- Press about 2/3 of the mixture firmly into the bottom of the pan.
- Reserve the rest for topping.
- Bake crust for 10–12 minutes until lightly set.
3️⃣ Prepare Rhubarb Filling
- In a bowl, combine chopped Rhubarb, sugar, cornstarch, lemon juice, and vanilla.
- Stir until evenly coated.
4️⃣ Assemble
- Spread rhubarb mixture over the warm crust.
- Sprinkle remaining crumble mixture evenly on top.
5️⃣ Bake
- Bake for 35–40 minutes, until topping is golden and filling is bubbling.
6️⃣ Cool & Slice
- Let cool completely before slicing into bars (this helps them set properly).
