Ingredients
  

  • Crust & Crumble
  • cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup cold unsalted butter cubed
  • Rhubarb Filling
  • 3 cups chopped Rhubarb
  • ¾ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Method
 

1️⃣ Preheat Oven
  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
2️⃣ Make Crust & Crumble
  1. In a bowl, mix flour, oats, brown sugar, baking powder, and salt.
  2. Cut in cold butter until mixture becomes crumbly.
  3. Press about 2/3 of the mixture firmly into the bottom of the pan.
  4. Reserve the rest for topping.
  5. Bake crust for 10–12 minutes until lightly set.
3️⃣ Prepare Rhubarb Filling
  1. In a bowl, combine chopped Rhubarb, sugar, cornstarch, lemon juice, and vanilla.
  2. Stir until evenly coated.
4️⃣ Assemble
  1. Spread rhubarb mixture over the warm crust.
  2. Sprinkle remaining crumble mixture evenly on top.
5️⃣ Bake
  1. Bake for 35–40 minutes, until topping is golden and filling is bubbling.
6️⃣ Cool & Slice
  1. Let cool completely before slicing into bars (this helps them set properly).
