1️⃣ Preheat Oven
- Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
2️⃣ Make the Crust
- In a bowl, combine flour and powdered sugar. Cut in cold butter until crumbly.
- Press mixture firmly into the prepared pan.
- Bake for 15 minutes until lightly golden.
3️⃣ Prepare the Filling
- While crust bakes, whisk together sugar, eggs, flour, salt, and vanilla until smooth.
- Fold in chopped rhubarb.
4️⃣ Add Filling
- Pour filling evenly over the warm crust.
5️⃣ Bake Again
- Return to oven and bake 30–35 minutes, until the center is set and top is lightly golden.
6️⃣ Cool & Slice
- Cool completely before slicing into bars.
- Dust with powdered sugar if desired.
