🍓 Rhubarb Dream Bars – Sweet, Tangy & Buttery

Ingredients
  

  • Shortbread Crust
  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • 1 cup cold unsalted butter cubed
  • Rhubarb Filling
  • 3 cups fresh rhubarb finely chopped
  • cups granulated sugar
  • 4 large eggs
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • 1 tsp vanilla extract
Optional Topping
  • Powdered sugar for dusting

Method
 

1️⃣ Preheat Oven
  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
2️⃣ Make the Crust
  1. In a bowl, combine flour and powdered sugar. Cut in cold butter until crumbly.
  2. Press mixture firmly into the prepared pan.
  3. Bake for 15 minutes until lightly golden.
3️⃣ Prepare the Filling
  1. While crust bakes, whisk together sugar, eggs, flour, salt, and vanilla until smooth.
  2. Fold in chopped rhubarb.
4️⃣ Add Filling
  1. Pour filling evenly over the warm crust.
5️⃣ Bake Again
  1. Return to oven and bake 30–35 minutes, until the center is set and top is lightly golden.
6️⃣ Cool & Slice
  1. Cool completely before slicing into bars.
  2. Dust with powdered sugar if desired.

Notes

🍓 Use fresh rhubarb for the best tart flavor.
❄️ Frozen rhubarb works too—thaw and drain excess liquid first.
🔪 Chill before slicing for cleaner squares.
