Ingredients
  

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil or butter
  • ½ cup creamy peanut butter
  • ÂĽ cup powdered sugar
  • ½ tsp vanilla extract
  • Pinch of salt

Equipment

  • Muffin tin
  • Paper liners
  • Microwave-safe bowl or double boiler
  • Spoon or spatula

Method
 

  1. Line a muffin tin with paper liners.
  2. Melt chocolate chips and coconut oil together until smooth.
  3. Spoon a small amount of melted chocolate into the bottom of each liner. Chill 5–10 minutes until set.
  4. In a bowl, mix peanut butter, powdered sugar, vanilla, and salt until smooth.
  5. Add a small spoonful of peanut butter mixture on top of the set chocolate layer.
  6. Cover with remaining melted chocolate.
  7. Chill 30–45 minutes, until fully set.
  8. Remove from liners and enjoy.

Notes

Use dark chocolate for a less sweet, richer flavor.
For crunch, add crushed peanuts or rice cereal to the filling.
Store in the fridge for firmer texture or at room temperature for softer cups.
Great for gifting—wrap individually in parchment or candy wrappers.
