  • 6 green or black olives stuffed with pimentos for “pupils”
  • Paprika optional, for color

Method
 

  1. Step 1: Boil the Eggs
  2. Place eggs in a saucepan and cover with cold water. Bring to a boil, cover, and remove from heat. Let sit for 10–12 minutes, then transfer to an ice bath to cool completely.
  3. Step 2: Prepare the Filling
  4. Peel the eggs and slice in half lengthwise. Remove yolks and place in a bowl. Mash yolks with mayonnaise, mustard, vinegar (if using), salt, and pepper until smooth and creamy.
  5. Step 3: Fill the Eggs
  6. Spoon or pipe the filling into the egg whites, smoothing the tops slightly.
  7. Step 4: Add the “Eyeballs”
  8. Slice the olives into rounds and place one in the center of each egg yolk mound to look like a pupil.
  9. Step 5: Create the “Veins”
  10. Use a toothpick dipped in red food coloring (or drizzle of hot sauce) to draw thin “veins” radiating outward from the yolk. For extra effect, dust lightly with paprika for a bloody hue.
