Ingredients
  

  • lbs russet potatoes peeled and diced
  • cups shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup mayonnaise or cream cheese for extra richness
  • 6 slices bacon cooked and crumbled
  • 4 green onions chopped
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: extra cheese or bacon for topping

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large pot, boil diced potatoes in salted water for about 10 minutes, until just fork-tender. Drain.
  3. In a large bowl, combine sour cream, mayonnaise, garlic powder, salt, and pepper.
  4. Stir in cheese, bacon (reserve some for topping), and green onions.
  5. Fold in cooked potatoes gently until well coated.
  6. Spread mixture into prepared dish. Top with extra cheese and bacon if desired.
  7. Bake uncovered for 35–45 minutes, or until golden and bubbly.
  8. Cool for 5–10 minutes and garnish with more green onions before serving.

Notes

You can use red or Yukon gold potatoes — no need to peel.
Add jalapeños for a spicy version.
Great as a side for grilled meats or BBQ.
