- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large pot, boil diced potatoes in salted water for about 10 minutes, until just fork-tender. Drain.
- In a large bowl, combine sour cream, mayonnaise, garlic powder, salt, and pepper.
- Stir in cheese, bacon (reserve some for topping), and green onions.
- Fold in cooked potatoes gently until well coated.
- Spread mixture into prepared dish. Top with extra cheese and bacon if desired.
- Bake uncovered for 35–45 minutes, or until golden and bubbly.
- Cool for 5–10 minutes and garnish with more green onions before serving.
Notes
You can use red or Yukon gold potatoes — no need to peel.
Add jalapeños for a spicy version.
Great as a side for grilled meats or BBQ.
