- In a large bowl, combine pineapple, cucumber, red onion, and cilantro.
- Drizzle with lime juice and honey (if using).
- Season with salt and black pepper. Add jalapeño if desired.
- Toss gently until everything is evenly coated.
- Chill for 10–15 minutes if time allows, then serve cold.
Notes
Swap cilantro for mint or basil if preferred.
Can be prepped up to 4 hours in advance (store covered in the fridge).
Great with grilled chicken, shrimp, or fish tacos.
