Ingredients
  

  • 2 cups fresh pineapple diced (about ½ medium pineapple)
  • 1 large cucumber diced (seeds removed if desired)
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh cilantro chopped (or mint)
  • 1 tbsp fresh lime juice
  • 1 tsp honey or agave syrup optional, for extra sweetness
  • Salt and black pepper to taste
  • Optional: 1 small jalapeño finely diced (for a spicy kick)

Method
