Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 large avocado diced
  • ½ cup crumbled feta cheese
  • ½ small red onion finely diced
  • 1 cup cherry tomatoes halved
  • 2 tbsp fresh parsley or cilantro chopped
  • Dressing
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp red pepper flakes

Method
 

  1. In a large bowl, combine chickpeas, avocado, feta, red onion, cherry tomatoes, and herbs.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and red pepper flakes if using.
  3. Pour dressing over the salad and gently toss to combine.
  4. Taste and adjust seasoning as needed.
  5. Serve immediately for best texture and freshness.

Notes

Add cucumber for extra crunch and freshness.
For more protein, toss in grilled chicken or shrimp.
Best served fresh, but leftovers can be stored up to 24 hours (avocado may darken slightly).
Use ripe but firm avocados to keep the salad from becoming mushy.
