Ingredients
  

  • 3 medium potatoes peeled and grated
  • ½ cup shredded cheese cheddar, feta, or a mix
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil or butter
  • Salt and black pepper to taste
  • Optional: chopped parsley or green onions for garnish

Method
 

  1. Squeeze excess moisture from grated potatoes using a clean kitchen towel.
  2. Heat olive oil or butter in a large skillet over medium heat.
  3. Add onion and garlic, sauté 2–3 minutes until fragrant.
  4. Add potatoes, season with salt and pepper, and press lightly into an even layer.
  5. Cook 8–10 minutes without stirring, until bottom is golden brown and crisp.
  6. Sprinkle cheese over potatoes, cover, and cook an additional 5–7 minutes until cheese melts and potatoes are tender.
  7. Flip carefully if desired for extra crispness on the other side.
  8. Garnish with parsley or green onions and serve hot.

Notes

Use a firm cheese that melts well but doesn’t release too much oil.
Grate potatoes finely for faster cooking and crispier texture.
Serve alongside eggs for a complete breakfast.
Leftovers can be reheated in a skillet for a few minutes to restore crispiness.
