Ingredients
  

Salad
  • 4 cups chopped Dandelion greens washed well
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved
  • ¼ red onion thinly sliced
  • ½ avocado sliced
  • ¼ cup toasted walnuts or sunflower seeds
  • Lemon Vinaigrette
  • 3 tbsp extra virgin olive oil
  • tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt and black pepper to taste

Method
 

1️⃣ Prepare Greens
  1. Wash and dry the Dandelion greens thoroughly. Chop into bite-sized pieces.
2️⃣ Make Dressing
  1. Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified.
3️⃣ Assemble Salad
  1. In a large bowl or platter, combine greens, cucumber, tomatoes, onion, avocado, and nuts/seeds.
4️⃣ Dress & Serve
  1. Drizzle vinaigrette over salad just before serving. Toss lightly.

Notes

🌿 Younger dandelion greens are milder and less bitter.
🍋 Extra lemon helps balance bitterness beautifully.
