- Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, egg, and melted butter.
- Pour wet ingredients into dry and stir until just combined.
- Fold in chopped bacon.
- Spoon batter into mini muffin cups, filling about ¾ full.
- Bake 12–15 minutes, or until a toothpick comes out clean.
- Let cool slightly, then drizzle with maple syrup and serve.
Notes
Use thick-cut bacon for the best texture.
Add mini chocolate chips for a sweeter twist.
Serve warm for maximum fluffiness.
Can be made ahead and reheated in the oven or toaster oven.
