Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 4 slices cooked bacon chopped
  • Maple syrup for drizzling
  • Optional: powdered sugar or mini chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk milk, egg, and melted butter.
  4. Pour wet ingredients into dry and stir until just combined.
  5. Fold in chopped bacon.
  6. Spoon batter into mini muffin cups, filling about ¾ full.
  7. Bake 12–15 minutes, or until a toothpick comes out clean.
  8. Let cool slightly, then drizzle with maple syrup and serve.
