Ingredients
  

Steak
  • 2 ribeye or sirloin steaks 8–10 oz each
  • 2 tbsp olive oil
  • 2 cloves garlic smashed
  • 2 sprigs fresh rosemary or thyme
  • Salt and black pepper to taste
Frites (Fries)
  • 1 lb russet potatoes cut into fries
  • 2 tbsp olive oil
  • Salt to taste
  • Optional: paprika or garlic powder
  • Optional Garnish / Sauce
  • Fresh parsley
  • Dijon mustard aioli, or béarnaise sauce

  • Skillet (preferably cast iron)
  • Baking sheet
  • Knife & cutting board

Method
 

Prep Fries:
  1. Preheat oven to 425°F (220°C). Toss potato fries with olive oil, salt, and optional seasonings. Spread on a baking sheet and bake 20–25 minutes, flipping halfway, until golden and crisp.
Cook Steak:
  1. Heat a skillet (preferably cast iron) over medium-high heat. Rub steaks with olive oil, salt, and pepper. Add garlic and herbs to the pan.
  2. Sear steaks 3–4 minutes per side for medium-rare, adjusting time for desired doneness. Baste with garlic-herb oil while cooking.
  3. Remove steaks from heat, cover, and rest for 5 minutes.
  4. Serve steaks alongside golden fries, garnish with parsley, and add your preferred sauce.

Notes

Use a cast iron skillet for the best sear.
Let steak come to room temperature before cooking for even doneness.
Double-bake or air-fry potatoes for extra crispiness.
Serve immediately for best texture.
