Prep Fries:
- Preheat oven to 425°F (220°C). Toss potato fries with olive oil, salt, and optional seasonings. Spread on a baking sheet and bake 20–25 minutes, flipping halfway, until golden and crisp.
Cook Steak:
- Heat a skillet (preferably cast iron) over medium-high heat. Rub steaks with olive oil, salt, and pepper. Add garlic and herbs to the pan.
- Sear steaks 3–4 minutes per side for medium-rare, adjusting time for desired doneness. Baste with garlic-herb oil while cooking.
- Remove steaks from heat, cover, and rest for 5 minutes.
- Serve steaks alongside golden fries, garnish with parsley, and add your preferred sauce.
Notes
Use a cast iron skillet for the best sear.
Let steak come to room temperature before cooking for even doneness.
Double-bake or air-fry potatoes for extra crispiness.
