Ingredients
  

  • 2 cups cooked chicken breast sliced or shredded
  • 4 sandwich rolls or ciabatta buns
  • 4 slices fresh mozzarella
  • 1 cup cherry tomatoes sliced
  • ¼ cup fresh basil leaves
  • ¼ cup pesto store-bought or homemade
  • 1 tbsp olive oil optional, for toasting buns
  • Salt and pepper to taste
  • Optional add-ons: balsamic glaze arugula, roasted red peppers

Equipment

  • Cutting board & knife
  • Skillet, grill, or panini press
  • Spoon or butter knife for spreading pesto

Method
 

  1. Preheat skillet or panini press if toasting buns. Brush with olive oil if desired.
  2. Slice sandwich rolls and spread pesto evenly on the cut sides.
  3. Layer chicken, fresh mozzarella, cherry tomato slices, and basil leaves on the bottom half of each roll.
  4. Season with salt and pepper to taste.
  5. Top with the other half of the roll.
  6. Toast sandwiches for 2–3 minutes in a skillet or press until cheese slightly melts (optional).
  7. Serve immediately, drizzled with balsamic glaze if using.

Notes

Use leftover roasted or grilled chicken to save time.
For a vegetarian version, replace chicken with grilled zucchini or roasted peppers.
Sandwiches are best served fresh but can be prepped ahead and wrapped for lunch.
For extra flavor, lightly drizzle olive oil and balsamic on tomatoes before assembling.
