Prep the Mushrooms
- Preheat oven to 375°F (190°C). Clean mushrooms and remove stems. Finely chop stems and set aside.
Make the Filling
- In a bowl, mix cream cheese, Parmesan, breadcrumbs, garlic, parsley, thyme, chopped mushroom stems, salt, and pepper until combined.
Stuff Mushrooms
- Spoon filling into mushroom caps, pressing lightly. Arrange on a greased baking sheet.
Bake
- Drizzle mushrooms with olive oil and bake for 18–20 minutes, until tops are golden and mushrooms are tender.
Garnish & Serve
- Optional: Top with diced red bell pepper or pomegranate seeds for a festive touch. Serve warm.
