Ingredients
  

  • 24 large white or cremini mushrooms stems removed
  • 4 oz cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp dried thyme
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • Optional: red bell pepper or pomegranate seeds for garnish

Method
 

Prep the Mushrooms
  1. Preheat oven to 375°F (190°C). Clean mushrooms and remove stems. Finely chop stems and set aside.
Make the Filling
  1. In a bowl, mix cream cheese, Parmesan, breadcrumbs, garlic, parsley, thyme, chopped mushroom stems, salt, and pepper until combined.
Stuff Mushrooms
  1. Spoon filling into mushroom caps, pressing lightly. Arrange on a greased baking sheet.
Bake
  1. Drizzle mushrooms with olive oil and bake for 18–20 minutes, until tops are golden and mushrooms are tender.
Garnish & Serve
  1. Optional: Top with diced red bell pepper or pomegranate seeds for a festive touch. Serve warm.
