Ingredients
  

For the salad:
  • 5 oz mixed greens spring mix, spinach, or arugula
  • 2 ripe peaches sliced
  • 1 cup fresh blueberries
  • ½ cup crumbled feta cheese
  • ¼ cup chopped pecans or walnuts optional
  • 2 tbsp fresh mint or basil chopped (optional)
For the dressing:
  • 3 tbsp olive oil
  • 1 tbsp lemon juice or balsamic vinegar
  • 1 tbsp honey
  • ½ tsp Dijon mustard
  • Salt & black pepper to taste

Equipment

  • Large salad bowl or platter
  • Whisk or jar for dressing

Method
 

Make the dressing:
  1. In a small jar or bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until smooth.
Assemble the salad:
  1. In a large bowl or platter, arrange mixed greens.
  2. Top with peach slices, blueberries, feta, nuts, and fresh herbs if using.
Dress and serve:
  1. Drizzle dressing over the salad just before serving. Toss lightly to coat. Enjoy immediately!

Notes

Substitute goat cheese for feta if preferred.
Add grilled chicken or shrimp to make it a full meal.
Toast the nuts for extra crunch and flavor.
