Preheat the Oven
- Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper for easy removal.
Make the Crust
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press evenly into the prepared pan. Bake for 8 minutes, then set aside to cool slightly.
Prepare the Cheesecake Layer
- Beat cream cheese, sugar, eggs, and vanilla until smooth and creamy. Spread the mixture evenly over the crust.
Add the Apple Layer
- In a separate bowl, toss diced apples with brown sugar, cinnamon, and nutmeg. Spoon evenly over the cheesecake layer.
Make the Streusel Topping
- Mix flour, brown sugar, and oats. Cut in cold butter using a fork or pastry cutter until crumbly. Sprinkle evenly over the apples.
Bake
- Bake for 30–35 minutes, or until the center is set and the topping is golden. Let cool to room temperature, then refrigerate for at least 2 hours.
Serve
- Cut into bars and drizzle with caramel sauce before serving. Enjoy chilled or slightly warmed.
