- Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
- In a large bowl, mix together mashed potatoes, eggs, cheddar, parmesan, green onions, and flour (if using). Season with salt and pepper.
- Divide mixture evenly among the muffin cups, filling each about ¾ full.
- Bake for 25–30 minutes, or until golden brown on top and set in the center.
- Cool for 5 minutes before gently removing from the tin. Serve warm!
Notes
For extra crispiness, add a sprinkle of breadcrumbs on top before baking.
Works best with thicker mashed potatoes (avoid very runny potatoes).
You can mix in crumbled bacon or finely chopped ham for a heartier version.
