Cheesy Mashed Potato Puffs

These Cheesy Mashed Potato Puffs are crispy on the outside, soft and cheesy on the inside. Made with leftover mashed potatoes, eggs, cheese, and a few pantry staples, they’re perfect for brunch, parties, or as a fun side dish.

Ingredients
  

  • 2 cups cold mashed potatoes
  • 2 large eggs
  • 1 cup shredded cheddar cheese or mozzarella
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped green onions or chives
  • ¼ cup all-purpose flour optional, for firmer texture
  • Salt & black pepper to taste
  • Nonstick cooking spray

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
  2. In a large bowl, mix together mashed potatoes, eggs, cheddar, parmesan, green onions, and flour (if using). Season with salt and pepper.
  3. Divide mixture evenly among the muffin cups, filling each about ¾ full.
  4. Bake for 25–30 minutes, or until golden brown on top and set in the center.
  5. Cool for 5 minutes before gently removing from the tin. Serve warm!

Notes

For extra crispiness, add a sprinkle of breadcrumbs on top before baking.
Works best with thicker mashed potatoes (avoid very runny potatoes).
You can mix in crumbled bacon or finely chopped ham for a heartier version.
