Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts
  • 2 cups crushed Cheez-It crackers
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 large eggs
  • 2 tbsp milk
  • 2 –3 tbsp olive oil for baking or sautéing
Optional Garnish:
  • Chopped parsley or chives

Method
 

Preheat and prepare
  1. Preheat oven to 400°F (200°C). Grease a baking dish or line with parchment paper.
Make the Cheez-It coating
  1. In a shallow bowl, combine crushed Cheez-Its, Parmesan cheese, garlic powder, paprika, salt, and pepper. In another bowl, whisk together eggs and milk.
Coat the chicken
  1. Dip each chicken breast into the egg mixture, then press into the Cheez-It mixture, ensuring a full coating.
Bake
  1. Place coated chicken in the prepared baking dish. Drizzle lightly with olive oil. Bake for 25–30 minutes, until the chicken is cooked through (internal temperature 165°F / 74°C) and the coating is golden brown and crispy.
Serve
  1. Garnish with parsley or chives if desired. Serve with your favorite sides like roasted veggies, mashed potatoes, or a fresh salad.

Notes

For extra crispiness, broil the chicken for 2–3 minutes at the end of baking.
Can also pan-fry in a skillet with olive oil for a quicker, crunchy version.
Substitute crushed Cheez-Its with other cheesy crackers if needed.
