Ingredients
  

  • ½ cup coconut flour
  • 4 large eggs
  • ½ cup unsweetened almond milk or any milk of choice
  • ¼ cup melted coconut oil or butter
  • 2 tbsp powdered erythritol or preferred sweetener optional
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt

Method
 

Preheat waffle maker
  1. Preheat your waffle iron according to manufacturer instructions.
Mix wet ingredients
  1. In a medium bowl, whisk together eggs, almond milk, melted coconut oil, and vanilla extract.
Combine dry ingredients
  1. In another bowl, mix coconut flour, sweetener, baking powder, and salt.
Mix batter
  1. Gradually add dry ingredients to wet ingredients, whisking until smooth. Let the batter sit for 2–3 minutes to thicken. Coconut flour absorbs a lot of liquid.
Cook waffles
  1. Spray the waffle iron with nonstick spray. Pour enough batter to fill the waffle grid and cook for 5–7 minutes, until golden brown and cooked through. Repeat with remaining batter.
Serve
  1. Top with your favorite toppings: fresh berries, sugar-free syrup, whipped cream, or nut butter.

Notes

Batter thickens as it sits; add a splash of milk if too thick.
Coconut flour can be finicky—don’t skip letting it sit for a couple of minutes.
Waffles can be made ahead and frozen; reheat in a toaster or oven for a quick breakfast.
