- Brown Sausage – In a large pot or Dutch oven, cook Italian sausage over medium heat until browned, breaking it apart into crumbles. Remove excess grease if necessary.
- Cook Aromatics – Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 1 more minute.
- Simmer Potatoes – Add diced potatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are tender.
- Add Cream & Greens – Stir in heavy cream and chopped kale (or spinach). Simmer another 5 minutes until greens are wilted and soup is creamy.
- Season & Serve – Adjust seasoning with salt and pepper. Ladle into bowls and top with grated Parmesan cheese. Serve hot with crusty bread.
Notes
Swap potatoes with sweet potatoes for a different flavor.
Use turkey or chicken sausage for a lighter version.
Add carrots or mushrooms for extra heartiness.
For dairy-free, replace cream with coconut milk.
