Ingredients
  

  • 1 lb Italian sausage mild or spicy
  • 1 tablespoon olive oil if needed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 medium potatoes diced (Yukon gold or russet work best)
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 cups chopped kale or spinach
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional, for heat
  • Salt & black pepper to taste
  • Grated Parmesan cheese for serving

Method
 

  1. Brown Sausage – In a large pot or Dutch oven, cook Italian sausage over medium heat until browned, breaking it apart into crumbles. Remove excess grease if necessary.
  2. Cook Aromatics – Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 1 more minute.
  3. Simmer Potatoes – Add diced potatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are tender.
  4. Add Cream & Greens – Stir in heavy cream and chopped kale (or spinach). Simmer another 5 minutes until greens are wilted and soup is creamy.
  5. Season & Serve – Adjust seasoning with salt and pepper. Ladle into bowls and top with grated Parmesan cheese. Serve hot with crusty bread.

Notes

Swap potatoes with sweet potatoes for a different flavor.
Use turkey or chicken sausage for a lighter version.
Add carrots or mushrooms for extra heartiness.
For dairy-free, replace cream with coconut milk.
