Ingredients
  

  • 1 large cucumber sliced into ¼-inch rounds
  • 4 oz cream cheese softened
  • 1 tsp fresh dill chopped (or ½ tsp dried dill)
  • Salt & pepper to taste
  • 12 pitted black olives halved (for “eyeballs”)
  • 12 small slices of red bell pepper or pimento optional, for “pupils”

Method
 

Prepare the Filling
  1. In a small bowl, mix cream cheese with dill, salt, and pepper until smooth and creamy.
Assemble the Sandwiches
  1. Spread a thin layer of the cream cheese mixture onto one cucumber slice. Top with another cucumber slice to make a mini sandwich.
Decorate the “Eyeballs”
  1. Place half a black olive on top of each sandwich to create an eyeball. Optionally, add a small red bell pepper piece or pimento in the center for a spooky pupil.
Serve
  1. Arrange on a platter for a fun, creepy display. Serve immediately or refrigerate until ready to enjoy.
