Easy Amish Apple Fritter Bread

Ingredients
  

For the Bread:
  • 1/3 cup light brown sugar
  • 1 tsp ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup 1 stick unsalted butter, softened
  • 2 eggs
  • tsp vanilla extract
  • cups all-purpose flour
  • tsp baking powder
  • 1/2 cup milk
  • 1 large apple e.g. Fuji or Honeycrisp, peeled and chopped
For the Glaze:
  • 1/2 cup powdered sugar
  • 1 –2 tsp milk
  • 1/4 tsp vanilla extract

Equipment

  • Mixing bowls
  • Hand mixer or whisk
  • Loaf pan (9x5 inch)
  • Small saucepan or microwave (for glaze)

Method
 

Preheat and prepare pan
  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
  2. Make cinnamon-sugar mix
  3. In a small bowl, mix brown sugar and cinnamon. Set aside.
Mix batter
  1. In a large bowl, cream butter and white sugar until smooth. Beat in eggs and vanilla.
  2. In another bowl, whisk flour and baking powder. Add to wet ingredients and mix until just combined. Stir in milk until batter is smooth.
Layer the bread
  1. Pour half the batter into the pan. Top with half the chopped apples, then half the cinnamon-sugar mix.
  2. Add remaining batter, then top with remaining apples and cinnamon-sugar. Lightly press apples into the batter.
Bake
  1. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan 10 minutes, then transfer to a wire rack.
  2. Make glaze
  3. In a small bowl, whisk powdered sugar, vanilla, and milk until smooth. Drizzle over cooled bread.

Notes

Granny Smith or Fuji apples work great for a sweet-tart balance.
For extra moisture, try adding 2 tbsp of applesauce to the batter.
This bread tastes even better the next day!
