Ingredients
  

  • 1 English cucumber sliced into half moons
  • 1 cup cherry tomatoes halved
  • 8 oz fresh mozzarella balls bocconcini or ciliegine, halved
  • ΒΌ cup fresh basil leaves chopped or torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze or balsamic vinegar
  • Salt & black pepper to taste

  • Knife & cutting board

Method
 

Assemble the salad:
  1. In a large bowl, combine cucumber slices, cherry tomatoes, mozzarella, and basil.
Dress the salad:
  1. Drizzle with olive oil and balsamic glaze (or vinegar).
  2. Season with salt and black pepper to taste.
Serve:
  1. Toss gently to coat. Serve immediately for the freshest flavor.

Notes

Use heirloom or colorful cherry tomatoes for extra color.
Add a squeeze of lemon juice for extra brightness.
Can be prepped a few hours ahead; add basil and dressing just before serving.
