Marinate the chicken:
- In a bowl or zip-top bag, mix olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper.
- Add chicken breasts, turning to coat. Marinate for at least 30 minutes (or up to 2 hours) in the fridge.
Grill the chicken:
- Preheat grill to medium-high heat.
- Grill chicken for about 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
Add the cheese:
- During the last minute of grilling, place a slice of mozzarella on each chicken breast and close the grill lid to melt.
Assemble toppings:
- Transfer chicken to a plate. Top each piece with tomato slices, avocado slices, and fresh basil.
Serve:
- Drizzle with balsamic glaze if desired. Serve immediately with a salad, grilled veggies, or over rice.
Notes
Use fresh mozzarella for the best melt and flavor.
You can also cook this chicken on a stovetop grill pan.
Add a squeeze of lemon for extra brightness.
