Ingredients
  

For the chicken:
  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
For the toppings:
  • 4 slices mozzarella cheese
  • 2 ripe avocados sliced
  • 2 medium tomatoes sliced
  • ¼ cup fresh basil leaves chopped or torn
  • Optional: balsamic glaze for drizzling

Equipment

  • Tongs

Method
 

Marinate the chicken:
  1. In a bowl or zip-top bag, mix olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper.
  2. Add chicken breasts, turning to coat. Marinate for at least 30 minutes (or up to 2 hours) in the fridge.
Grill the chicken:
  1. Preheat grill to medium-high heat.
  2. Grill chicken for about 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
Add the cheese:
  1. During the last minute of grilling, place a slice of mozzarella on each chicken breast and close the grill lid to melt.
Assemble toppings:
  1. Transfer chicken to a plate. Top each piece with tomato slices, avocado slices, and fresh basil.
Serve:
  1. Drizzle with balsamic glaze if desired. Serve immediately with a salad, grilled veggies, or over rice.

Notes

Use fresh mozzarella for the best melt and flavor.
You can also cook this chicken on a stovetop grill pan.
Add a squeeze of lemon for extra brightness.
