Preheat oven
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
Prepare the batter
- In a large mixing bowl, combine cake mix, drained and chopped mandarin oranges, eggs, oil, and vanilla extract.
- Beat on medium speed until smooth and fully combined.
Bake the cake
- Pour batter into the prepared pan and spread evenly.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool
- Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack or serve directly from the pan.
Optional glaze
- In a small bowl, whisk together powdered sugar and mandarin juice until smooth.
- Drizzle over the cooled cake for a glossy, citrusy finish.
Serve
- Slice into squares and enjoy as a light, refreshing dessert.
Notes
For extra flavor, fold in ½ cup shredded coconut or chopped nuts.
The glaze is optional, but it adds a lovely citrusy sweetness.
