Ingredients
  

For the Sandwiches:
  • 8 slices sandwich bread sourdough, white, or Italian
  • 8 slices mozzarella cheese or 2 cups shredded mozzarella
  • 16 slices pepperoni or turkey pepperoni
  • ½ cup pizza sauce
  • 2 tablespoons butter softened, for spreading

Equipment

  • Skillet or griddle
  • Spatula
  • Knife for slicing

Method
 

  1. Preheat a skillet or griddle over medium heat.
  2. Spread butter on one side of each bread slice.
  3. On the unbuttered side, layer 1 slice of mozzarella, 4 pepperoni slices, a tablespoon of pizza sauce, and another slice of cheese.
  4. Top with another slice of bread, buttered side facing out.
  5. Place sandwich on the skillet and cook for 3–4 minutes per side, or until bread is golden brown and cheese is melted.
  6. Remove from skillet, let cool slightly, slice, and serve warm.

Notes

  • Add cooked sausage, mushrooms, or olives for a deluxe version.
  • Substitute with gluten-free bread or dairy-free cheese if needed.
  • Use marinara sauce in place of pizza sauce if that’s what you have on hand.
