Make the cookie base
- Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, then gradually mix in flour until dough forms.
Shape the mini pizzas
- Roll dough into 12 small balls and flatten slightly on a parchment-lined baking sheet to form mini cookie bases.
Bake
- Bake for 10–12 minutes until lightly golden on the edges. Allow cookies to cool completely.
Prepare the frosting
- In a small bowl, beat together cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
Assemble the fruit pizzas
- Spread a layer of cream cheese frosting on each cooled cookie. Top with a colorful arrangement of fresh fruit.
Chill & serve
- Refrigerate for 10–15 minutes to set slightly. Serve chilled or at room temperature.

Use seasonal fruit for the freshest flavor.
Mini fruit pizzas can be made a few hours in advance and stored in the fridge.
