Ingredients
  

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven
  2. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. Prepare the dough
  4. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until smooth.
  5. Beat in the egg and vanilla extract until combined.
  6. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  7. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
  8. Shape cookies
  9. Roll tablespoon-sized portions of dough into balls.
  10. Place on the prepared baking sheet about 2 inches apart.
  11. Use a fork to press down each cookie in a crisscross pattern.
  12. Bake
  13. Bake for 10–12 minutes, or until edges are lightly golden.
  14. Remove from oven and allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of sea salt on top of each cookie before baking.
Don’t overbake; cookies should be soft in the center when removed.
Store in an airtight container at room temperature for up to 5 days.
