  • 1 cup pumpkin puree
  • 2 –3 tbsp maple syrup or honey
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup granola store-bought or homemade
  • Optional toppings: chopped nuts mini chocolate chips, or a drizzle of caramel

Method
 

Prepare the Pumpkin Layer
  1. In a small bowl, mix pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract until smooth.
Assemble the Parfaits
  1. In serving glasses or jars, layer ¼ cup Greek yogurt, 2–3 tbsp pumpkin mixture, and a sprinkle of granola. Repeat until glasses are filled, ending with a layer of granola on top.
