Ingredients
  

  • 1 8-count tube refrigerated crescent roll dough
  • 4 large eggs scrambled
  • ½ lb breakfast sausage cooked and crumbled
  • 1 cup shredded cheddar cheese or mozzarella
  • Salt & pepper to taste
  • 1 tbsp milk or cream for fluffier eggs
  • Optional: chopped chives parsley, or green onions for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Scramble the eggs
  1. In a skillet, whisk eggs with milk, salt, and pepper. Cook over medium-low heat, stirring until just set (they will finish cooking in the oven).
Cook sausage
  1. In a separate skillet, cook breakfast sausage until browned and crumbled. Drain excess fat.
Assemble the rolls
  1. Unroll crescent dough and separate into 8 triangles. On each triangle, layer scrambled eggs, sausage, and cheese. Roll up from the wide end to the tip.
Bake
  1. Place rolls on prepared baking sheet. Bake for 12–15 minutes, until golden brown.
Serve
  1. Sprinkle with fresh herbs if desired, and serve warm.

Notes

Swap sausage with bacon or ham for variety.
Add veggies like bell peppers, spinach, or mushrooms for a more hearty roll.
These can be made ahead and frozen; just reheat in the oven or air fryer.
