Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Scramble the eggs
- In a skillet, whisk eggs with milk, salt, and pepper. Cook over medium-low heat, stirring until just set (they will finish cooking in the oven).
Cook sausage
- In a separate skillet, cook breakfast sausage until browned and crumbled. Drain excess fat.
Assemble the rolls
- Unroll crescent dough and separate into 8 triangles. On each triangle, layer scrambled eggs, sausage, and cheese. Roll up from the wide end to the tip.
Bake
- Place rolls on prepared baking sheet. Bake for 12–15 minutes, until golden brown.
Serve
- Sprinkle with fresh herbs if desired, and serve warm.
Notes
Swap sausage with bacon or ham for variety.
Add veggies like bell peppers, spinach, or mushrooms for a more hearty roll.
These can be made ahead and frozen; just reheat in the oven or air fryer.
