Savory Hatch Chile Beans

These savory Hatch Chile Beans are slow-simmered with green chiles, onion, garlic, and spices for a comforting, zesty side or meatless main dish. Perfect with rice, tortillas, or as a topping for tacos and nachos!

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 4 oz cans roasted Hatch green chiles (mild or hot)
  • 2 15 oz cans pinto beans (or black or kidney beans), drained and rinsed
  • 1 cup vegetable or chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp lime juice optional
  • Fresh cilantro for garnish (optional)

Method
 

Sauté aromatics
  1. Heat olive oil in a large skillet or saucepan over medium heat. Add diced onion and sauté for 3–4 minutes until softened.
  2. Stir in garlic and cook for another 30 seconds until fragrant.
Add Hatch chiles & spices
  1. Stir in the Hatch green chiles, cumin, paprika, oregano, salt, and pepper. Cook for 2 minutes to combine flavors.
Simmer with beans
  1. Add beans and broth. Bring to a simmer, reduce heat, and cook uncovered for 25–30 minutes, stirring occasionally, until slightly thickened.
Finish and serve
  1. Stir in lime juice (if using) and taste for seasoning.
  2. Garnish with cilantro if desired. Serve hot as a side, dip, or main dish.

Notes

For a creamy texture, mash some of the beans in the pot while simmering.
Use fresh roasted Hatch chiles if in season!
Want a spicy kick? Add a pinch of cayenne or chopped jalapeño.
