Sauté aromatics
- Heat olive oil in a large skillet or saucepan over medium heat. Add diced onion and sauté for 3–4 minutes until softened.
- Stir in garlic and cook for another 30 seconds until fragrant.
Add Hatch chiles & spices
- Stir in the Hatch green chiles, cumin, paprika, oregano, salt, and pepper. Cook for 2 minutes to combine flavors.
Simmer with beans
- Add beans and broth. Bring to a simmer, reduce heat, and cook uncovered for 25–30 minutes, stirring occasionally, until slightly thickened.
Finish and serve
- Stir in lime juice (if using) and taste for seasoning.
- Garnish with cilantro if desired. Serve hot as a side, dip, or main dish.
Notes
For a creamy texture, mash some of the beans in the pot while simmering.
Use fresh roasted Hatch chiles if in season!
Want a spicy kick? Add a pinch of cayenne or chopped jalapeño.
