Ingredients
  

  • 3 cups sweet potatoes peeled and thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg optional
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Method
 

Preheat Oven:
  1. 375°F (190°C). Grease a 9×9-inch baking dish.
Prepare Sauce:
  1. In a saucepan, melt butter over medium heat. Stir in flour and cook 1–2 minutes. Gradually whisk in milk, cooking until thickened. Add salt, pepper, and nutmeg. Remove from heat and stir in half the cheddar cheese.
Assemble:
  1. Layer half of the sweet potato slices in the baking dish. Pour half of the cheese sauce over the potatoes. Repeat layers with remaining sweet potatoes and sauce. Top with remaining cheddar and Parmesan cheese.
Bake:
  1. Cover with foil and bake 30 minutes. Remove foil and bake 15 more minutes until top is golden and bubbly.
Serve Warm:
  1. Let rest 5 minutes before serving.

Notes

Make ahead: Assemble and refrigerate up to a day in advance; bake before serving.
Add flavor: Sprinkle chopped fresh thyme or rosemary between layers.
