- Preheat Oven – Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Prepare Egg Mixture – In a bowl, whisk together eggs, milk, salt, and pepper.
- Assemble Tacos – Lightly warm tortillas to make them pliable. Place tortillas in the baking dish, folding slightly to form taco shells. Add cooked sausage/bacon, diced veggies, and cheese to each. Pour egg mixture evenly over the tacos.
- Bake – Bake uncovered for 18–20 minutes, or until eggs are fully set and cheese is melted.
- Serve – Garnish with salsa, avocado, or sour cream. Serve warm.

Make ahead: Assemble tacos in the dish, cover, and refrigerate overnight. Bake fresh in the morning.
