Ingredients
  

  • 6 small flour or corn tortillas
  • 6 large eggs
  • ½ cup milk
  • Salt & black pepper to taste
  • 1 cup cooked sausage or crumbled bacon
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup diced bell peppers optional
  • ¼ cup diced onions optional
  • Salsa avocado, or sour cream (for serving)

Method
 

  1. Preheat Oven – Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Prepare Egg Mixture – In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Assemble Tacos – Lightly warm tortillas to make them pliable. Place tortillas in the baking dish, folding slightly to form taco shells. Add cooked sausage/bacon, diced veggies, and cheese to each. Pour egg mixture evenly over the tacos.
  4. Bake – Bake uncovered for 18–20 minutes, or until eggs are fully set and cheese is melted.
  5. Serve – Garnish with salsa, avocado, or sour cream. Serve warm.

Notes

Make ahead: Assemble tacos in the dish, cover, and refrigerate overnight. Bake fresh in the morning.
Swap sausage/bacon for cooked chicken or turkey sausage for variety.
Add black beans, corn, or spinach for extra nutrition.
Use small taco shells or tortillas to make mini versions for kids or parties.
