- Sear beef (optional but recommended)
- In a hot skillet with 1 tbsp olive oil, sear beef cubes for 2–3 minutes until browned. This adds flavor but can be skipped.
- Add to slow cooker
- Place seared (or raw) beef and potatoes in the slow cooker.
- Mix garlic butter
- In a small bowl, mix melted butter, garlic, onion powder, parsley, thyme, salt, and pepper. Pour over beef and potatoes. Toss to coat.
- Cook
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until beef is tender and potatoes are cooked through.
- Finish & serve
- Stir gently, garnish with fresh parsley if desired, and serve warm.
Notes
Use Yukon gold or baby red potatoes for best texture.
Add a splash of beef broth or Worcestershire for deeper flavor.
Reheats well and is freezer-friendly.
