Slow Cooker Garlic Butter Beef Bites & Potatoes

Ingredients
  

  • 2 lbs beef chuck roast cut into bite-sized cubes
  • 1.5 lbs baby potatoes halved (red or gold)
  • 6 tbsp unsalted butter melted
  • 5 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • ½ tsp thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Equipment

  • Slow cooker (5–6 qt)
  • Skillet (for searing, optional)
  • Cutting board & knife

Method
 

  1. Sear beef (optional but recommended)
  2. In a hot skillet with 1 tbsp olive oil, sear beef cubes for 2–3 minutes until browned. This adds flavor but can be skipped.
  3. Add to slow cooker
  4. Place seared (or raw) beef and potatoes in the slow cooker.
  5. Mix garlic butter
  6. In a small bowl, mix melted butter, garlic, onion powder, parsley, thyme, salt, and pepper. Pour over beef and potatoes. Toss to coat.
  7. Cook
  8. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until beef is tender and potatoes are cooked through.
  9. Finish & serve
  10. Stir gently, garnish with fresh parsley if desired, and serve warm.

Notes

Use Yukon gold or baby red potatoes for best texture.
Add a splash of beef broth or Worcestershire for deeper flavor.
Reheats well and is freezer-friendly.
