- Cream butter and sugar
- In a large bowl, cream the butter and sugar until light and fluffy (about 2 minutes).
- Add yolks and flavoring
- Mix in egg yolks, vanilla, and almond extract.
- Add flour and salt
- Gradually mix in flour and salt until a soft dough forms. Chill for 30 minutes.
- Shape cookies
- Preheat oven to 350°F (175°C). Roll dough into 1-inch balls. Place on parchment-lined baking sheet.
- Make indentations
- Press a thumb or spoon into the center of each cookie to make a small well.
- Fill and bake
- Fill each well with ~½ tsp of jam or jelly. Bake for 11–13 minutes, until bottoms are lightly golden.
- Cool and decorate
- Cool completely. Dust with powdered sugar or festive sprinkles if desired.
Notes
Jam will firm up as it cools.
You can swap jam for Hershey’s Kisses, chocolate ganache, or holiday-colored candy melts.
Dough can be made ahead and refrigerated for 1–2 days.
