Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, cream together butter and sugar until light and fluffy.
- Mix in egg yolk, vanilla, and red food coloring until smooth.
- Stir in flour, cocoa powder, baking soda, and salt until just combined.
- Scoop dough into 1½-tablespoon balls. Roll in sugar or sprinkles if desired.
- Place cookies 2 inches apart on baking sheet.
- Bake 9–11 minutes, until edges are set and centers look soft.
- Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Don’t overbake—cookies firm up as they cool.
For extra softness, slightly underbake by 1 minute.
Swap vanilla for almond extract for a bakery-style flavor.
Dough can be chilled 20 minutes for thicker cookies.
