Ingredients
  

  • ¼ cup unsalted butter softened
  • cup granulated sugar
  • 1 large egg yolk
  • ½ tsp vanilla extract
  • ½ tsp red food coloring
  • ¾ cup all-purpose flour
  • 1 tsp unsweetened cocoa powder
  • ¼ tsp baking soda
  • tsp salt
  • Optional coating:
  • Extra granulated sugar
  • Valentine sprinkles or sanding sugar

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until light and fluffy.
  3. Mix in egg yolk, vanilla, and red food coloring until smooth.
  4. Stir in flour, cocoa powder, baking soda, and salt until just combined.
  5. Scoop dough into 1½-tablespoon balls. Roll in sugar or sprinkles if desired.
  6. Place cookies 2 inches apart on baking sheet.
  7. Bake 9–11 minutes, until edges are set and centers look soft.
  8. Cool on the pan for 5 minutes, then transfer to a wire rack.

Notes

Don’t overbake—cookies firm up as they cool.
For extra softness, slightly underbake by 1 minute.
Swap vanilla for almond extract for a bakery-style flavor.
Dough can be chilled 20 minutes for thicker cookies.
