Ingredients
  

Skewers
  • lbs pork tenderloin or pork shoulder cut into cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper cut into chunks
  • 1 red onion cut into chunks
  • Skewers wooden or metal
Marinade
  • ½ cup BBQ sauce
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 tbsp pineapple juice
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tbsp brown sugar optional for extra caramelization

Method
 

1️⃣ Make the Marinade
  1. In a bowl, whisk together BBQ sauce, soy sauce, olive oil, pineapple juice, garlic, paprika, pepper, and brown sugar.
2️⃣ Marinate the Pork
  1. Add pork cubes to the marinade. Cover and refrigerate for 1–4 hours for best flavor.
3️⃣ Assemble Skewers
  1. Thread pork, pineapple, bell pepper, and onion alternately onto skewers.
4️⃣ Grill
  1. Preheat grill or grill pan to medium-high heat.
  2. Cook skewers for 10–15 minutes, turning every few minutes until pork is cooked through and slightly charred.
5️⃣ Glaze & Finish
  1. Brush with extra BBQ sauce during the last 2–3 minutes of grilling for a sticky glaze.
